High-altitude jetting question

Theoretically, if I'm at a high-altitude jetting and I ride to say, 1000 feet altitude for a cross-country trip, can I bypass re-jetting by playing a little choke or is it not a good idea. I know it'd be hard to dial that in but perhaps just to avoid overheating?
