Are you running a stock air filter?

You go from the pilots to the mains between 3-4K RPM

i thought you transition based on your throttle opening, not your RPM. if your getting hesitation at WOT i would suspect too small mains.

Very likely. You can't trust the techs now-a-days, even at the dealer. Learn how to do it yourself, if you have basic mechanical skills.

I've found they can't even torque an axle nut correctly, so I'm buying a front stand before I need tires again.
