Return to stock question
The carbs were modified then dyno tuned to match a set of TBR pipes and cans. My monoposto days could end so I would return to stock cans in order to have a set of rear pegs again.
Can I just return to stock jetting or do I have to reinstall the original diaphram springs and close the drilled holes? (And just how much torque and hp do you lose when you get married?)

Why don't you just put on the stock pipes and see how it runs? If you're unhappy with the way it's running, then tear into the carbs. It also might help to see how much your spouse enjoys riding on your Superhawk. A stock seat isn't exactly a treat for most passengers but love may conquer all.
I've been married often enough and long enough to know that some questions are better left unanswered.

You horsepower and torque are both cut in half after you get married. That is unless your wife rides too.
Get her in an MSF course, then buy her a bike. Kawi EX500 is a good one to start her on.

If you're going to be running stock pipes, I would just take the easy road and return the carbs to stocks specs (slides and all). That way you know it will work and you won't be tearing the carbs off 20 times to get it right.
