The Metzeler M5 is a sport touring tire. The Dunlop is designed for racing and not street riding. Use the Metzeler if you want a good street tire. Use the Dunlop if you want a good track tire.

Comparing apples to apples, oranges to oranges
The M5s are a fine Sport touring tire, comparing a set to CT2, the M5s have the harder centers and softer outers. The M5s take a some distance to get the rubber sticky.. Yet I have used a set of M5s for distance rides on the 2003 RC-51. and the set held up well, and stuck in the curves -even under -Hard braking,coming out of the curves hard. And gave more than stable feel in the rain, and wet pavement.
As for an opinion on Dunlop 211. I have never been a Dunlop user..
