Its like food you find in your fridge & you not sure if its good or not. If there is an "IF" then its a "NO". Too much bad can result from either bad food or a bad thermostat. I have had a few fail in weird ways at weird ages. Meaning it seemed too new to be the problem but swapping it out solved the issue.
I agree, if you are in there and asking the question, just replace it.
The bike can run without one in a pinch but it actually cools better with one. I think the water runs through the rads too fast to properly cool without one.

i only pulled it to check it out cuz i noticed a coolant leak near the thermostat and that it took awhile to fully warm up sometimes and thought that might be part of the problem. Is there anything in the general vicinity that could leak due to a bad thermostat? Otherwise I geuss I'm going to start ripping and replacing hoses

Its just a simple thermostat housing. You can order the gasket or cut one out of gasket material Or RVT. Could be a loose hose clamp. Take apart and reassemble. Use Vaseline to put hoses back on. It prevents them tearing next removal and eases install.
As said you can run the bike wo the thermostat. I had it like that for years. Just put one in eventually.
