To measure the shims I took off the cam chains and when I put it back together I had the timing totally off. Took it apart and corrected it after reading the manual over and over again very carefully and now its running like a totally new bike, like it should have all along. I guess you vets were right all along and I was too stubborn to admit I had it wrong. Still have the water related issue and will eventually look into coils and R/R.

After all these months it was the timing all along XD

When symptoms match known issues.....

Yes to seal this thread off for history, I will offer one more THANKS to you guys who know a thing or two! I have already learned so much about working on these bikes. If I could go back in time, I wouldnt have bought this bike because it burns oil and the seller did not tell me anything about that. But its not super bad right now, but will need to be addressed in the future. Not really exactly sure what causes a motorcycle to burn oil but that whole process will be for another day, and another thread. Cheers from Grand Rapids Michigan

Certainly a disappointment about the oil consumption. With proper maintenance and addressing the known issues, the engines are good for at least 100K miles.
My guess is the PO ran the oil low and often.

Long shot but the bike shop boss used this a couple times when I worked there. If there's any change an oil ring got stuck to the piston, try some different oils, maybe this ring-free product. You can use seafoam in the oil before a change to try and clean some gunk out.
