Single carb?

While working on my Dad's Fatboy, I just started thinking. His Harley bike has a single carb and our Superhawk has two. Why couldn't we switch to a single carb? Of course there are certain issues to work around, airbox & air filter, fuel lines, coolant lines, throttle linkage, etc. Let's just forget about those items for now. Why couldn't someone just switch to a single carb?

I tried searching to see if this has been talked about before, but to no avail. I'm just curious to see what the "Throbbing Brain" (the collective minds here) has to say about this.

Why not?

The one rob did, from ^ VTROTM, looks like one side carb, pod type air filter and a file line going in?
